Questions about Xperia10 mini (help needed)

I bought this phone 2-3 days ago and i cant say im happy for the time being...anyway
I would like to know how to:

1)Create folders for my pictures/videos/music. It is VERY annoying to have them all in one screen,

2)The same for SMS

3)Put more shortcuts in desktop (for example battery remaining percentage) not widgets

4)Use a photo as wallpaper and stay centered in the main screen. Not stretched in all screens
