When repeating events are deleted as one-off's in Google Calendar, they remain in MPE and the phone. How can MPE sync so that when repeating events are occasionally missing in Google they are deleted in the phone? E.g. a repeating event which has been deleted for one week, but resumes the next.

Exceptions in ruled events are not synced with google. You have to live with this issue

I have the same problem here, but only with birtdays. Which exception can i have there? Is this a problem with events i have scheduled on my Phone or with events in google?

The problem with exceptions is that Google has a complicated way to save Exceptions, cause of this they are not read/synced with Google. But can you tell me where is the sense to set an exception for a birthday ?

No, I can not. I am not aware that I set one.
