If I were to restore a previously made backup, will I in that process get the chance to select particular items to restore before 'pressing go', or will the process overwrite all current phone content?

As it is an F J Wechselberger, FJsoft proprietary format, there is no way to check beforehand wether the backup I choose to restore/restore from contains the item(s) I want to retrieve if I am generally content with the current data on the phone but am looking for, say, an erroneously deleted item.

You can choose to restore the calendar or the phonebook but not to restore only single entries.
