I found a solution to my problem, which turned out to be with the the Samsung Galaxy tab 10.1, not with MPE. If it's of interest, here's what I came up with:

Calendar syncs perfectly between Outlook 2007 and my Samsung Galaxy tablet 10.1 (Honeycomb 3.1). Also contacts in Outlook sync correctly to the contact list that is included in the email app on the tablet.

But only a portion of the Outlook contacts synched originally to the separate 'contacts' app ...
